What are the lines in marble (i.e. stone counter top) called?

Like say you wanted to "call out" (as in building plans) that the marble should be set with the _________ verticaly.
other than veins…

Vein is the most appropriate word. If they are more round, they are vugs. If an interlocking, wavy, line is present, they are called stylolites.

I think the veins are mineral deposits just like wood has.

veins. you could call them markings if you wanted to also.

the different color markings in marble are referred to as veins in the marble. sometimes the veins are referred to as short or brief, meaning the color pattern is composed of small patches or points of color, other times the veins are long, meaning irregular lines of color are present.

The proper term is "striations". This is also the terminology used in the stone trades.
